Ingredients

  • 1 large baguette

  • 3 large eggs

  • 1 medium white onion

  • 1/3 bunch of parsley

  • 1/3 bunch of coriander

  • Salt and pepper

  • 1 teaspoon of Chuma pepper

  • 3 Merguez sausages

  • 25mg CBD oil

  • For the Chuma Pepper:
  • 2 heads of garlic (peeled into cloves)

  • 3 tablespoons sweet paprika

  • 1 heaped tablespoon of hot paprika

  • 1/2 cup oil

  • 1/2 squeezed lemon

  • 1 flat teaspoon salt

  • 1/3 teaspoon ground caraway

  • 1/3 teaspoon cumin

  • 1 teaspoon crushed chili (or 4 small chili peppers)

  • 1 tablespoon water

Directions

  • To prepare the Chuma pepper, add peeled garlic cloves and all other ingredients listed under Chuma Pepper to a food processor. Blend well and transfer to a container. Let it sit in the refrigerator for about an hour to firm up.
  • Chop the white onion into cubes and sauté in a skillet with a bit of olive oil and a pinch of salt until caramelized.
  • In a separate bowl, crack the eggs and add the chopped parsley and coriander, salt, pepper, and a teaspoon of Chuma pepper. Add the caramelized onion to the bowl.
  • In the same skillet, add the Merguez sausages and sear until they are almost done. At this point, add the egg mixture to the skillet and cook everything together until done.
  • Warm up the baguette in the oven until it gets a bit crispy on the outside. Cut it in half and spread some mayonnaise, a teaspoon of Chuma pepper, and ketchup.
  • Drizzle the CBD oil evenly over the egg and sausage mixture, making sure not to overheat the oil. The ideal temperature for CBD oil is below 356°F (180°C), as higher temperatures can degrade the CBD and reduce its effectiveness. Avoid decarboxylating CBD oil to maintain its full benefits.
